We had so many apples from our apple picking adventure at Lawrence Farms Orchards. Is there any better way to consume apples than by making some dessert? Try out these recipes then let us know what you think! I decided to make one healthier baked good and then one to indulge in at night. The healthier baked good are some apple cinnamon muffins while the dessert option is an apple crumble. Both of these recipes are fairly easy to make!
Cinnamon Apple Muffins
I tried out a recipe from COOKIE + kate which made me 15 muffins.
Ingredients
- 1 3/4 cups whole wheat flour
- 1 1/2 tsp baking powder
- 1 tsp ground cinnamon (next time I make these I would add another tsp – I love cinnamon)
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup grated apple
- 1 cup diced apple
- 1/3 cup extra-virgin olive oil
- 1/2 cup maple syrup (check out where to get some local maple syrup!)
- 2 eggs
- 1/2 cup plain Greek yogurt
- 1/2 cup apple sauce
- 1 tsp vanilla extract
- 1 tbsp raw sugar for sprinkling on top
Instructions
I started off by preheating the oven to 425 degrees Fahrenheit and prepped some liners into a muffin tin. I then combined the dry ingredients and added the grated apple and chopped apple. I was able to score some fresh apple cider from when I grated the apple. The recipe recommended squeezing out excess moisture from the grated apples which left me with the most delicious apple cider.
Next I mixed the wet ingredients in a separate bowl then combined the wet into the dry.
I then poured the mixture into the muffin tins and topped them with sugar.
… and viola!
Apple Crumble
For this recipe, I followed a Bon Appetit recipe that my family has always used.
Ingredients
Filling
- 4 apples (I used Granny Smiths)
- 1/3 cup mix of dried sweetened cranberries and raisins
- 1/2 cup sugar
- 3 tbsp ginger
- 1 tbsp all purpose flower
Topping
- 1/3 cup brown sugar
- 1/4 cup all flour
- 1/4 cup old-fashioned oats
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/8 tsp ground cloves
- 1/4 cup chilled butter cut into cubes
- 2/3 cup chopped toasted pecans
Instructions
Baked in two parts, I began by chopping up the apples and preheated the oven to 375 degrees Fahrenheit. After chopping up the apples, I mixed them with the rest of the ingredients for the filling and let that sit for 5 min. While the Bon Appetite recipe calls for separating the filling into multiple ramekins, we’ve always just piled it all into a rectangular pyrex dish. This dish bakes for about 20 min.
While that was in the oven, I prepared the topping by combining all of the dry ingredients, massaging the butter in until it created a paste, and then adding in the pecans.
I love this dessert by itself or elevated with some vanilla ice cream. My favorite thing about this recipe is that it’s just as delicious cold out of the fridge as it is fresh out the oven.
