We always have a ton of fun with these Farm-to-Table posts but I think you’re all really going to love this one…I mean, doesn’t everyone love pizza! This was our first attempt at making our own pizzas in the wood-fire stove at TinkerBox, and it was both a fun and delicious experience!
Farm-to-Table Recipes from the Hudson Valley: Wood-Fired Pizza
Keeping true to our farm-to-table theme, we used all local ingredients purchased from local shops and markets in the Hudson Valley. Our eyes were a bit bigger than our stomachs as we starting planning all the different concoctions of toppings we could create so we ended up buying more than we actually used this first time around. Some of the ingredients we used included parsley and shiitake mushrooms from Ravenwood, sausage from Applestone Meat, fresh mozzarella from Saunderskill Farms, and we threw in some herbs picked right from our garden at TinkerBox.
The dough came from a no crust bread recipe and worked out quite nicely, but you could use any pizza dough recipe or pick up ready made pizza dough from your local market or pizza place. We used a cast iron skillet and cooked the pizzas in the wood-fired stove at Tinkerbox but you could also use a pizza stone if you have one.
Each pizza was cooked over the fire for less than 10 minutes. The trick is to get the fire really hot so the pizza cooks fast at a high temperature and doesn’t burn on the bottom.
Our favorite topping combinations included shiitake mushrooms, caramelized onions, rosemary and Asiago; fresh mozzarella, tomatoes, basil and salami; sausage, sage and Parmesan; and blue cheese, figs and balsamic vinegar.
Every one of the pizzas was a mouthwatering success – we’ll definitely be making more of these at TinkerBox again soon!
