It’s strawberry season in the Hudson Valley! You may remember, last year, we made these delicious Strawberry Shortcake Scones. This year, we thought we’d pick some up some local strawberries and use them to craft a Strawberry Mojito cocktail as a toast to the start of the summer season!
Using fresh mint picked from the garden at TinkerBox, local strawberries from Saunderskill Farm, and locally distilled Quackenbush Stillhouse Rum, we whipped up this twist on a traditional mojito.
Try this refreshing cocktail to kick off your summer!
Hudson Valley Spirits: Strawberry Mojito
10 fresh mint leaves (and more for garnish)
4-6 strawberries, cut into pieces
2 ounces of white rum
1 ounce fresh lime juice or 1 lime cut into wedges
2-3 teaspoons of simple syrup
club soda
Add the mint leaves, strawberries, rum, lime juice or wedges, and simple syrup into a glass or cocktail shaker.
Muddle the mint, lime, and strawberries to release the flavor.
If using a cocktail shaker, shake vigorously for 15 seconds. Then strain over a glass filled with ice. If you’re making your cocktail directly in the glass, add ice and then club soda. Garnish with extra mint and strawberries. Enjoy!
