We are so lucky to be a part of the Long Season Farm CSA where we pick up a bounty of beautiful and delicious veggies every other Saturday at Damn Good Honey Farm all winter long! By this time in the winter season, we are also learning how to be extremely creative when it comes to figuring out what to do with so many root vegetables.
We took inspiration from a local legend, the Kinsley Martini (by Hotel Kinsley in Kingston), and our favorite root vegetable and created a Beet Martini.
What better way to look forward to spring after this storm than a bright drink! The Beet Martini is both delicious and good for you- a fun way to consume your vegetables.
Beet Martini
Ingredients
Beet Simple Syrup:
- 1 sliced, peeled beet cubed
- 1/4 cup water
- 1 tbsp honey
Beet Martini:
- 1 oz beet simple syrup
- 1 oz gin (I used Catskill Provisions Distillery Pollinator Gin)
- 1 oz vodka (I used Hudson Valley Distillers New York Vodka)
- 1/4 oz blood orange olive oil (If you don’t have blood orange olive oil you can substitute 1/4 oz good olive oil + 1/2 oz of orange juice or just orange juice)
Directions
Simmer all of the simple syrup ingredients for about 10-15 minutes and then remove from heat and let cool.
Shake all of the martini ingredients with ice in a cocktail shaker and serve chilled. Garnish with a thinly sliced beet or orange peel!
