Saunderskill Farms
It’s officially spring – and local farms in the Hudson Valley are reopening for the season. From local farms and farmers markets to farm festivals and stands, there are numerous places to purchase local produce in the Hudson Valley. Located just a few minutes from Waterfalls Properties, is one of our favorite farms and local markets, Saunderskill Farms in Accord.
Saunderskill offers a large selection of home-grown fruits and vegetables, maple syrup, pies, cider donuts, flowers, plants, jams, jellies and much more! You can pick your own strawberries and pumpkins, when in season and enjoy special events like the antique tractor pull, summer corn festival and autumn hayrides.
When I visited the farm last weekend I picked up some of their freshly picked asparagus, garlic, and a couple of lemons. Here’s my easy recipe for delicious and simple Lemon Garlic Asparagus.
Lemon Garlic Asparagus
1 bunch of asparagus
2 tablespoons of olive oil
Juice from half a lemon
2 cloves of garlic
salt & pepper
Rinse the asparagus and snap or cut off hard ends on the bottom. If the asparagus spears are thick, I usually cut them in half. If you have a bunch with mixed sizes, cut the larger ones in half (slice down the middle) to make them all about the same size. Mince two cloves of garlic and put aside.
Lay prepped asparagus on a lined baking pan. Drizzle olive oil and lemon juice over asparagus, add chopped garlic, and salt and pepper. Toss to coat evenly and spread asparagus out on baking sheet.
Place in oven on low broil for 10 minutes. Serve immediately.
As an alternative to broiling once the weather warms up, you can make this on the barbecue. Grill the asparagus on high heat for about 8 to 10 minutes. You want the asparagus to end up a little charred on the outside but still slightly firm.
